One-Pan Lemon Garlic Chicken & Veggies
Ingredients (Serves 2–3)
For the chicken:
2 boneless, skinless chicken breasts
2 tbsp olive oil
Juice of 1 lemon + zest
3 garlic cloves, minced
1 tsp dried oregano
Salt & pepper to taste
For the veggies:
1 zucchini, sliced
1 bell pepper, chopped
1 red onion, sliced
1 cup cherry tomatoes
1 tbsp olive oil
Pinch of salt & pepper
Instructions
Preheat the oven to 400°F (200°C).
In a small bowl, mix the olive oil, lemon juice, garlic, oregano, salt, and pepper.
Place chicken in a zip-top bag or bowl, pour the marinade over, and let sit while you prep the veggies (10–15 min is great, but overnight is even better!).
Toss the chopped veggies with olive oil, salt, and pepper.
Spread the veggies out on a lined baking sheet. Nestle the marinated chicken breasts right on top.
Bake for 25–30 minutes, or until the chicken is cooked through and veggies are tender.
Optional: Broil for the last 2–3 minutes to get a little golden crisp on top.
